Summary
Administration
§ Assists in the implementation of the hotel’s Food & Beverage Strategy (goals, tactics and actions) to achieve and exceed forecasted revenue figures in Food & Beverage, and other revenue generating departments where relevant.
§ Ensures beverage operations activities are aligned with the Food & Beverage Strategy, and the Hotel Actions have been implemented where appropriate.
§ Assists in the preparation and update of the Departmental Operations Manuals.
§ Attends regular departmental and cross-departmental meetings and ensure departmental briefings and meetings are effective and conducted as necessary.
Financial
§ Generates and Manages Cost Reports: Oversee the cost of inventory and supplies and submit reports on a periodic basis. They review cost increases, communicate with vendors to review charges, and apply strategies to lower costs when possible.
§ Maintains complete records of all beverage purchase agreements, contracts and quotes for the hotel.
§ Sets, monitors and controls budget for the beverage unit/bar.
§ Plans and implements cost control measures.
§ Plans and implements systems to maximize sales and revenue.
§ Assists in monthly reforecasting.
§ Assists in managing costs based on key performance indicators.
§ Ensures that all hotel, company and local rules, policies and regulations relating to financial record keeping, money handling and licensing are adhered to, including the timely and accurate reporting of financial information.
Marketing
n Assists in the preparation, utilization and update of Marketing plans, as necessary.
n Supports in assessing Food & Beverage advertising needs and opportunities for the hotel.
n Recommends and develop proposals and implement Food & Beverage sales promotions with external partners to support advertising and sales campaigns.
n Closely works with the PR and Marketing Manager to maximize use of the targeted market information including customer profile, behaviour, and yield for the planning and evaluation of marketing communications.
Customer Service
n Prepares drinks in accordance with the guest’s order.
n Works with the team to create the company experience for guests.
n Creates an environment for guests designed to stimulate all senses through personal services, amenities and experiences.
n Follows up with guests with additional services that enhance the guests’ experience.
n Handles guest requests personally and/or refer as appropriate.
n Demonstrates hotel values when providing service and teamwork.
n Handles all guest and internal customer complaints and inquiries in a courteous and efficient manner, following through to ensure problems are resolved satisfactorily.
Operations
n Create Beverage Program:
o Develop beverage programs, which includes what types of drinks to offer, which brands of liquor to use, pricing, and other menu aspects.
o This includes creating wine lists, beer selections, and cocktail items.
n Order Beverages and Maintain Inventory:
o Order adequate supplies of liquor and non-alcoholic drinks and maintain a sufficient inventory. This duty involves forecasting and keeping track of which drinks are most in demand.
o Beverage managers must ensure a supply of non-drink bar items, such as snacks, napkins, mixers, and drink garnishes.
n Manage Staff Training:
o Train all bartenders, baristas and all associates associated with mixing and serving drinks. Demonstrate all beverage recipes and mixing procedures thoroughly.
o Ensure that associates maintain knowledge of beverages and wines.
n Assists the Director of Food & Beverage by maintaining accurate records of up-to-date expenditures, future commitments and remaining budget for the year.
n Is aware of community, business, political and social factors that may affect the hotel’s financial performance.
n Makes sure other associates work in a supportive and flexible manner with other departments, in a spirit of “We work through Teams”.
Personnel
n Assists in the recruitment and selection of Food & Beverage associates where applicable. To follow hotel guidelines when recruiting and use a competency-based approach to selecting associates.
n Ensures the punctuality and appearance of Food & Beverage associates where needed, making sure that they wear the correct uniform and maintain a high standard of personal appearance and hygiene, according to the hotel and department is grooming standards.
n Conducts or supports annual Performance Appraisal Discussions and to support Food & Beverage associates in their professional development goals.
n Plans and implements effective training programmes for Food & Beverage associates in coordination with the Training Manager and Departmental Trainers.
n Encourages associates to be creative and innovative, challenging and recognizing them for their contribution to the success of the operation.
n Supports the implementation of The People Brand Standard, demonstrating and reinforcing Hyatt’s Values and Culture Characteristics.
n Supports in ensuring Food & Beverage associates have a complete understanding of and adhere to associate rules and regulations.
n Supports in ensuring Food & Beverage associates follow all hotel, company and local rules, policies and regulations relating to fire and hazard safety, and security.
n Support the implementation of changes as a result of the Associate Engagement Survey.
n Works closely with other associates in a supportive and flexible manner, focusing on the overall success of the hotel and the satisfaction of hotel guests.
General
n Attends and contributes to all meetings as required.
n Ensures services provided by the department are always available and are always carried out to define Standard with the utmost efficiency, consistency and courtesy as detailed in the Department Operation Manual.
n Handles guest and associate inquiries in a courteous and efficient manner, reporting complaints or problems if no immediate solution can be found.
n Is knowledgeable in statutory legislation in associate and industrial relations, understanding and strictly adhering to rules & regulations established in the Employee Handbook and the hotel’s policies concerning fire, hygiene and health & safety.
n Takes an active involvement in the welfare, safety, development and wellbeing of associates providing advice, counselling and truthful, diplomatic feedback.
n Ensure all outlet associates maintain high standards of personal presentation & grooming.
n Maintains positive guest and colleague interactions with good working relationships.
n Exercises responsible management and behaviour at all times and positively represent the hotel management team and Hyatt International.
n Responds to requests to undertake any reasonable tasks and secondary duties and to changes as dictated by the hotel, industry and company.
Other Duties
n Maintains strong, professional relationships with the relevant representatives from competitor hotels and other organizations.
n Responds to changes in the Food & Beverage function as dictated by the industry, company and hotel.
n Reads the hotel's Associate Handbook and adhere to the hotel's rules and regulations and in particular, the policies and procedures relating to fire, hygiene, health and safety.
n Attends training sessions and meetings as and when required.
n Carries out any other reasonable duties and responsibilities as assigned.
n Fully understands and adheres to Hyatt’s Food and Beverage Vision and Mission.
n Remains motivated, competitive, and accountable.
n Reports for duty punctually, wearing the correct uniform and name badge at all times.
Qualifications
Have relevant experience at the same position in a 5-Star property, strong communication and bartending skills, confident with Beverage knowledge.
